I can't set the z-zero to machine. I am using v-carve pro set to machine bed, .75 material height and when I z probe it sets itself to bed not material

If you set Vcarve to "set zero" on the machine bed (material Z), then you have to probe to the machine bed as well.
After you probe the bed, the Z axis will usually lift up though it doesn't have to. When you start the job, the Z axis will move to the "safe Z" position you have set in Vcarve which will be above the material then move the X and Y axes to the start job position.
